Bacon Cheddar Biscuits


These bacon cheddar biscuits are good all-in-one breakfasts, though I'll admit they're pretty crumbly and there are probably some ways for me to improve that through further experimentation. But! They're still a good reliable snack and they pack a good protein punch while also being all-in-one 2.5:1. I modified this from a recipe in the keto diet calculator.


Ingredients (makes about 7 ~100 calorie biscuits)

21g fried uncured/unsweetened bacon

10g reserved bacon fat

16g grated cheddar cheese

20g macadamia nut flour

4g coconut flour

34g KetoCuisine baking mix

2g psyllium husk powder

4g baking powder

10g European butter

6g 40% cream


Directions

Preheat oven to 350 deg F. Combine all ingredients with a mixer (or with the food processor attachment for an immersion blender) until it forms a crumbly dough. Roll the dough with your hands and form into balls on parchment paper, pressing down on each one slightly. Bake for 6-8 minutes, until light brown.
