Blueberry, banana, and vanilla yogurt

We often find that M wakes up hangry. I'm sympathetic, since I have weird blood sugar, but his is actually diet-related. In the mornings we can get into a bit of a vicious cycle where he's too hangry to concentrate on eating and we're frantically trying to get some food, any food, into him, and doing that with many discrete parts of a meal while trying to prioritize getting fat into him is not a recipe for a relaxing start to the day. To save our sanity, I came up an all-in-one fruit and yogurt meal.

This is a riff on something I used to make him for babyfood, actually. For that, I threw a ton of banana and blueberries into Greek yogurt, blended it all together, and put it in those plastic food pouches with the spout he could just suck it straight out of. He used to love it. This is basically the same thing, just with proportionally less fruit and a crapload of canola oil to bulk it up to his ratio. I found the oil gives it a weird aftertaste, so I added a bit of keto-friendly vanilla extract to cover it up.


Ingredients, measured out according to your ratio:

Fage 5% Greek yogurt

Canola oil

Blueberries

Banana

Pure vanilla extract (alcohol-free)


First, mix the Greek yogurt and canola oil together. For this I use the whisk attachment on my stick blender. I find it does a better job of blending the two together than a spoon or a hand whisk - even at our low ratio it is a *lot* of oil, so you want to make sure you get it blended in well to hide the taste and ensure each spoonful is getting enough oil into it. This is a good time to add the vanilla too.


Next, I add the blueberries and banana. For this I switched my stick blender to the immersion blender attachment, which does a better job than the whisk of chopping up the blueberries and bananas and distributing them evenly.


This freezes well, so I often make it ahead in a big batch and freeze individual servings.


Notes/variations:

I leave the blueberries fairly coarse, since my son can chew just fine and I don't want to hinder his oral development by giving him stuff that's too smooth. You can use your judgement here depending on what your kid can handle, as long as the berries are sufficiently chopped up to be distributed evenly with each spoonful.


I want to note that I do have banana in here, which is generally quite starchy for a keto diet and generally isn't used (it's not part of the 10% or 15% fruit lists), and I think the only reason we can manage it is because we're at such a low ratio. I like adding it to this because I find it thickens it a bit (the more easily it sticks to a spoon, the less messy mealtime is when he insists on feeding himself) and he loved banana before the diet so I'm happy to get a bit in him when I can. But if it's out of the picture for you, and you'd rather use 10% fruits, you could use all blackberries in this in lieu of the blueberries in banana. For a different taste, I've also had success mixing unsweetened applesauce with the yogurt and oil.
