Cauliflower cheese

We lived in the UK for a couple of years and for all the reputation British cuisine has, nothing beats a really great Sunday roast - especially when there's a side of cauliflower cheese. The non-keto version of this involves a bechamel sauce but it's pretty easy to make a version that satisfies keto diet requirements, and since cauliflower is such a low-carb vegetable, even on a higher ratio this can still be a fairly substantial all-in-one meal. And it freezes great!


You can make this a fairly smooth mash if you mix everything together using an immersion blender, or make it a little more of a chewing challenge by using a potato masher - make sure the mashed pieces are small enough to make even distribution easy, but still big enough to make your kid chew them.

Ingredients:

Cauliflower

Cream cheese

Shredded cheddar cheese

Olive oil

Butter

Salt, to taste


Weigh out above ingredients according to your ratio. I'd aim for roughly the same weighed amount of cream cheese and cheddar, add several grams of butter and olive oil until you hit your fat requirement, and then bulk out the rest of your ratio with as much cauliflower as you can. When you're putting this into your diet calculator make sure you note whether your target weights are for cooked or raw cauliflower.


To prepare: first, steam the cauliflower until it's fairly soft. I have a stovetop steamer, but you can also do this by putting a few tablespoons of water and your cauliflower in a glass bowl in the microwave, covering with plastic wrap, and microwaving for five minutes. (Beware the steam when you remove the plastic wrap). Let it drain and air dry a bit. If you're using the potato masher, I recommend mashing the cauliflower at this stage; it's easier to scrape all the bits out of the holes and corners when it's just cauliflower versus later on when it's covered in sticky cheese and butter.


While you steam the cauliflower, throw the cream cheese, cheddar cheese, olive oil, and butter into a mixing bowl and microwave it for about a minute to help start melting everything. Dump in your steamed, air dried cauliflower and stir until everything is nicely melted and evenly mixed. If you are going for a smoother texture, this is a good time to run the immersion blender. Add salt to taste.


Serve warmed.
