IMPORTANT NEWS: Keto Cadbury Creme Eggs

Easter is coming up and while my daughter was easy to shop for, M is obviously another issue. I figured I can make sugar-free gummy candies for him without much trouble but was lamenting my inability to reproduce my favorite standard Easter candy (Cadbury eggs and Peeps) until some lovely person in a keto Facebook group I'm a member of pointed out this recipe for a keto-friendly homemade Cadbury Creme Egg from Matthew's Friends. (If you haven't checked out the recipes there, you should. The website is run out of the UK and has lots of special occasion keto things... like keto haggis for Burns Night. Isn't that delightful?)


I've already gone ahead and ordered egg-shaped candy molds, candy brushes, and foil wrappers so that the Easter Bunny can bring some legit-looking treats to M. I've found Vermont Creamery mascarpone cheese to be the highest-fat, lowest-everything-else that I can find in stores so these eggs will basically end up being fat bombs. I'm going to give it a dry run this week, since I've never made filled chocolates like this, and see how they go before prime time on Easter. Crossing my fingers that his Easter basket ends up looking as sugary and ridiculous as his sister's!
